Lobster Ravioli with Grilled Shrimp and Scallops

Shopping List
4 Servings

INGREDIENTS:

12 Lobster Ravioli
12 Large Shrimp (16/20 count)
12 Scallops
3 Tbsp. Tomato Paste
1 1/2 tsp. Lobster Base (“Better Than Bouillon”)
2 Cups Heavy Cream
4 oz. Sherry
1 Red Bell Pepper (cut into julienne strips)
8 oz. French Green Beans (snipped)
12 Asparagus (cut into 3-4 pieces per stem)
1/2 cup Edamame (shelled)
16 Grape Tomatoes (whole)
1 Shallot
1 1/2 oz. Canola or Olive Oil
1/4 tsp. of each Salt and White Pepper

Preparation

  1. Using skewers, alternate a shrimp and scallop until you have 3 of each on 4 skewers.
  2. Peel and slice shallot, and reserve it in a separate place.
  3. Prepare the remaining vegetables as described in the shopping list and toss in a large bowl until well combined.
  4. In a small sauce pot over low heat, combine tomato paste, lobster base, and heavy cream. Allow the mixture to come to temperature slowly, stirring often. When hot, remove from heat, but keep hot and whisk in sherry.
  5. In a sauté pan, place canola oil over medium high heat, add sliced shallots, and sauté until lightly browned. Then add remaining vegetables and sauté until al dente and season with salt and pepper. Reserve for serving.
  6. Place lobster ravioli in boiling water and allow to simmer for 3 to 5 minutes.
  7. Place skewer on grill for approximately 1 1/2 minutes per side. Brush with whole butter during cooking process and season with seasoning salt.
  8. Place the vegetables evenly on 4 warmed plates. Then place 3 lobster ravioli on each plate and top with lobster sauce. Finally, place a skewer on each plate and enjoy.

CHEF MIKE’S TIPS:
  • In the soup aisle of you supermarket, there is a product by the name of “Better Than Bouillon.” I used this product to shorten the preparation time.
  • Also in your supermarket, in the refrigerated fresh pasta case, you will find lobster ravioli. If you have trouble finding this item, check with a specialty food store.
  • In the frozen food section, you will find shelled edamame (soy beans).
