Grilled Mahi-Mahi
INGREDIENTS:
| 6.5 oz. |
Mahi-Mahi |
| 1/2 - 1 oz. |
Butter |
| 1/2 tsp. |
Montreal Steak Seasoning |

INSTRUCTIONS:
- For excellent grill marks, place the piece of fish on the grill facing the 2 o’clock position.
- Using a basting brush, lightly coat the top of the fish with butter and seasoning. Cook for 3 minutes.
- Turn the fish, placing it back on the grill facing the 10 o’clock position. Cook for 3 minutes.
- At the six minute mark, flip the fish over to the 2 o’clock position. Brush and top the fish with butter and seasoning. Cook for 3 minutes.
- Turn the fish, placing it back on the grill facing the 10 o’clock position. Cook for 3 minutes.
- Fish should have diamond marks on both sides.
- Check for doneness, cook longer or glaze with butter and season if necessary.
- Garnish with a fresh piece of lemon. Enjoy!

CHEF MIKE’S TIPS:
When cooking on a grill, it’s a good idea to lightly coat the grill with a cooking spray or canola oil to keep the fish from sticking to the grill when turning.
